TUNA NOODLE CASSEROLE
1 (8 oz). package noodles (if you are a cholesterol watcher use no-egg noodles)
1 10 oz. can cream of mushroom soup (you can substitute Cheddar cheese soup)
1 c. grated fat free or low fat Sharp cheese
1 c. fat free milk
2 (7. oz) cans tuna (in water), drained
seasoned bread crumbs (optional)
Heat oven to 350 degrees. Cook noodles according to package directions. Combine noodles, soup, milk, tuna, and cheese in casserole dish (spray with Pam first to avoid sticky clean up). Cover with seasoned bread crumbs (optional). Heat in oven for 20-30 minutes until heated through and cheese is melted. Serves 6.

BEEF BURRITOS
1 lb. ground beef (or ground turkey)
2 12 oz. can fat free/low fat refried beans
1 8 oz. package fat free Cheddar cheese
1 pkg. taco seasoning
Wheat tortillas
Preheat oven to 350 degrees. Brown ground beef, drain. Return to frying pan and add refried beans. Thoroughly mix in taco seasoning; heat until warm throughout. Roll mixture in wheat tortillas. Place in Pam sprayed casserole dish and top with cheese. Bake for 10-15 minutes in 350 degree oven until cheese is melted.
You may serve with: diced tomatoes, onions, peppers, shredded lettuce, salsa, Mexican corn or rice, avocado slices, fat free sour cream. Makes 6-8 tortillas depending on how much meat mixture you use in each tortilla.

This one looks fancy but is soooo easy.
SWEET AND SOUR CHICKEN
6 boneless, skinless chicken breasts
1 pkg. onion soup mix
1 small bottle Russian dressing
8 oz. jar of apricot preserves
Preheat oven to 350 degrees. Mix together soup mix, Russian dressing, and preserves. Spray baking pan with Pam and arrange chicken pieces in pan. Pour mixture over chicken, spreading it around well. Bake for 40-50 minutes (depending on thickness). You can test chicken for readiness by sticking with a fork. If juice is not clear bake a little longer. Serves 6.
You may serve with: steamed broccoli, green beans with almonds or salad, brown rice (plain or with raisins and peanuts added), apricot or pineapple slices.

Here's how to fancy up canned soup (good choices include split pea, tomato, bean): just add a salad or apple slices or chunky apple sauce for a full meal.

BISCUIT BITS WITH DEVILED HAM
1 (10 count) can of refrigerated biscuits
1/4 cup margarine
1 4 1/2 oz. can deviled ham
1/4 cup grated Parmesan
Snip biscuits into quarters. Arrange in two 8 inch round baking dishes (or pie plates). Heat together margarine and deviled ham, stir until blended. Pour ham mixture over biscuit pieces. Sprinkle with Parmesan cheese. Bake at 400 degrees for 15 minutes, oro until golden brown. Makes 40.
